Move Over P.S.L. - BYE FELICIA! Enter: Pear-fectly Spiced Rosé

Thanksgiving is already crazy & hectic with the traditional non-stop cooking marathon.  So Morsels and Mixology devised a recipe for you all to create a multitude of complex cocktails out of one basic syrup -AND- an easy & quick dessert to pile onto the table with the rest of the feast!

 

Enter : Pear-fect Spiced Rosé!  You might have a couple bottles of rosé laying around the house from the warmer months which makes this syrup an easy to assemble go-to for the colder months ahead.   Great way to make room for your winter reds too.

 

Below you will find our P.S.R. syrup recipe and 3 different cocktails we made with this one, time-saving, and delicious cocktail syrup for your Thanksgiving get-together.  Definitely something to be grateful for this Thanksgiving! 

 

Because lets face it... Drinking while cooking the feast is half the fun! 

Pear-fect Spiced Rosé Recipe

 

Ingredients:

 

1 - 750ml bottle of dry rosé wine

 

1/2 cup of sugar

 

4 Bosc pears

 

1/2 tsp. ground cardamom

 

1 cinnamon stick

 

1 vanilla pod

 

1 tsp. lemon zest

 

1/2 tsp. black peppercorn

 

2 inch ginger peeled and sliced

 

1/2 grapefruit or pomelo squeezed juice

 

1 Tbsp. lemon juice 

 

3 Tbsp. pomegranate juice 

 

Instructions:

  1.  Combine rosé wine, sugar, cardamom, cinnamon stick, and scraped out vanilla beans from the pod into a sauce pan over medium heat.  Reserve the vanilla pod.  Let mixture come to a slow boil and then reduce heat to simmer. 

  2. Peel and cut pears vertically down for two halves.  Remove core of pear with melon baller or pairing knife.  Lay pears cut side down into simmering rosé wine mixture and allow to simmer for 10-15 minutes.  Flip each pear over and continue to let pears simmer in sauce pan until fully tender.

  3. Remove pears from sauce pan and reserve for a delicious dessert with ice cream, mulled wine, or a great addition to cranberry sauce.  Leave remaining liquid in sauce pan.

  4. Add vanilla pod, lemon zest, black peppercorn, ginger, pomelo juice (you can use grapefruit or orange juice), lemon juice, and pomegranate juice to the remaining liquid in the sauce pan and bring back to a slow simmer to allow the acidic juices to impart flavor to residual syrup. 

  5. Take sauce pan off heat, strain, and reserve liquid to cool.

 

There goes a delicious craft cocktail syrup to use in your Thanksgiving cocktails. 

SOOOO lets put it to the test! 

Morsels and Mixology Mulled Rosé Recipe

 

 

 

Ingredients & tools:

 

1 - 750ml bottle of dry rosé wine

 

1 star anise

 

1 cinnamon stick

 

1 tsp. allspice berries

 

3 Tbsp pear brandy 

 

3 Tbsp 'Pear-fect Spiced Rosé' Syrup

 

1 zest of pomelo, grapefruit, or orange

 

slow cooker 

 

Instructions:

 

  1.  Combine all ingredients into your slow cooker with the exception of the pear brandy and turn onto low with lid on for 30 minutes to and hour.

  2. Turn off slow cooker, remove spices, and add pear brandy (we used Belle de Brillet poire).

  3. Replace cover onto slow cooker and turn on "WARM" mode.  

  4. Leave mugs, ladle, and sliced rosé poached pears for garnish so guests can serve themselves.

Pink D.U.M.B.O. Sour Recipe 

 

Ingredients: 

 

2 oz. rye whiskey

 

1 oz. lemon juice

 

 1/2 oz. simple syrup 

 

1/2 oz. 'Pear-fect Spiced Rosé' Syrup  

 

1/2 oz. sparkling rosé

 

Instructions:

 

  1. Combine all ingredients in to a shaker, with the exception of the 'Pear-fect Spiced Rosé' syrup, fill with ice, and shake.  

  2. Strain into a rocks glass filled with ice.

  3. Top off with 'Pear-fect Spiced Rosé' syrup and sparkling rosé.    

 

A play off of a riff of the whiskey sour, the N.Y. Sour adds a float of fruity red wine to the top of the classic cocktail.  We decided to join the party by using our 'Pear-fect Spiced Rosé' to top the town and paint it pink.

 

Mixologist's Note:  Didn't have time to make the 'Pear-fect Spiced Rosé' Syrup?  It's all gravy!  Just replace the syrup with dry rosé wine, add 1/4 oz. more of simple syrup to shaker. A great alternative to the NY Sour!

 

Spiced Rosé Spritz Recipe

 

 

Ingredients: 

 

1-1/2 oz. dry rosé wine 

 

1/2 oz. grapefruit juice

 

3/4 oz. 'Pear-fect Spiced Rosé' Syrup

 

sliced grapefruit

 

club soda 

 

Instructions:

 

  1. Combine rosé wine, grapefruit juice, 'Pear-fect Spiced Rosé' syrup in a wine glass.

  2. Top with club soda and gently mix.

  3. Garnish with grapefruit slice and straw 

 

This is a great low A.B.V. alternative for guests who don't want to drink much or prefer wine to harder spirits.  Plus it tastes great even on a cold day!
