Quinoa, packed with protein, make these not only a filling & power providing popable, but also helps stretch your supply of eggs, keeps you fuller for longer, and can even be frozen & reheated!
Quino Egg Poppers Recipe:
2 cups cooked quinoa
1 cup cooked vegetables (zuchinni, onions, peppers, asparagus, and/or mushrooms)
1 cup shredded cheese
1/2 cup cooked bacon, sausage, or ham
2 scallions chopped
1. Preheat oven to 375 and prepare greased sheet pan with parchment paper.
2. Whisk eggs and combine with remaining ingredients, season with salt & pepper (& herbs if you would like) .
3. Press quinoa mixture into pan and bake for 20 minutes, rotate and bake for an additional 15 minutes, until edges are crispy.
4. Let cool for 15 minutes, remove pan and parchment paper, slice into bars or squares and enjoy! Can be frozen for a full week of breakfast.
