Adjust your Attitude

on Acid-Adjusting


Acid-adjusting is pretty obvious & straight-forward; you add a tart component to adjust the acidity of a libation. 

The real leg work when it comes to the "adjusting" part in acid-adjusting is actually adjusting people's attitude on replacing or modifying fresh citrus juice and other sour components with SUPASAWA. 

Tasked with turning a cynic into a true believer, enhancing fruit juices that are, inherently, of low titratable acidity by supplementing SUPASAWA is a pretty good place to start.  Gaining the ability to match the acidity of a lemon or lime to that combined with the flavors in fruit juices like pineapple, cranberry, orange, and grapefruit proves to be an invaluable tool. 

In 'The Midas Touch' cocktail, illustrated above, the bitterness of the grapefruit and sweetness of the basil + agave water rang true, but the sour was on snooze. 

 It wasn't until the addition of SUPASAWA when this cocktail proclaimed,

"Rise n' Shine", launched to the ranks of the classic, refreshing, quintessential pucker of lemonade, and catapulted this cocktail into the balanced cocktail hall of fame.

With laser-like precision and total dominion over the pH level of your libation, its pretty transparent that SUPASAWA is transcending everything it takes a punch at.  Take a jab at this crystal clear cordial we've devised to add an invisible sneak attack of Sweet/Salty/Sour to any cocktail that needs rescuing!

SUPASAWA SUPER-PRO TIP: Use this seriously sour cocktail mixer for perfect butterfly pea flower results every time!  The super acidic concoction changes the pH balance of the Butterfly pea flower tea and, quite impressively, transforms the tea from a deep blue hue to a vibrant, saturated magenta. 

Crystal Clear Cordial with SUPASAWA Reccipe:

Ingredients:

  • 3/4 cup - SUPASAWA seriously sour cocktail mixer 

  • 1/4 cup - Water

  • 1 cup - Sugar

  • 1/4 tsp - Lemon oil extract or expressed oil of two lemons

  • 1/2 tsp - Salt

Instructions:

  1. Combine SUPASAWA, water, and sugar in a sauce pan over medium heat, stirring to dissolve sugar completely and simmer to the vapor point just before boiling.

  2. Remove from heat and stir in lemon oil and salt.  Allow to cool.

  3. Refrigerate once at room temperature.

  4. Add 1/2 oz. increments to any cocktail that needs an extra punch or use as the sweet & sour backbone as an alternative to classic sour mix to create cocktails of your own.

We kept it cordial by pairing our new crystal clear cohort with vodka infused with lemongrass & unripe green rhubarb proving an incredible duo and super-duper easy 2 ingredient cocktail.​
